As a graduate student who has the privilege of working from home, I have to find ways to make quick meals and snacks that do not distract me from getting my work done during the day. This is easier said than done because food is my passion, so I would gladly spend an hour plus making lovely plant based creations during the day but this mindset is not conducive to me finishing my dissertation so I can finally get my PhD. With that said, smoothies and “milkshakes” have become my go-to meals and snacks to keep me fueled during the day while also engaging my creative food energies. Not only are they rather simple to execute but the flavor combinations and options are endless, plus clean up doesn’t require much which allows me to get back to work quickly.
Today I created a really simple combination that’s more of a snack than an actual meal. While browsing my cabinets I realized I had a pack of raw jungle peanuts that I had completely forgotten about. But fret not, forgotten ingredients never go to waste in my cabinets :). I swiftly gathered up the other ingredients for this shake and whipped together this fast delicious treat. I hope you enjoy it as much as I did.
- 1/4 Cup Raw Jungle Peanuts
- 2 Frozen Bananas
- 1 Cup Nut Milk
- 1 Tbsp Cacao Nibs
- 1/4 Tsp Ground Vanilla Bean Powder
What You’ll Need:
- Glass or Jar for Serving
Place peanuts and nut milk in blender and let sit for 5 to 10 minutes. This will allow the peanuts to soften to aid the blending process. Add bananas and vanilla then blend the ingredients on high. While the blender is going, slowly add cacao nibs then quickly turn the blender off. This will allow the nibs to slightly blend but also hold their integrity creating the “chocolate chip” aspect of this smoothie. Transfer contents to your serving vessel and enjoy immediately.
